300 grams lean beef mince

3 egg whites

1 brown onion, diced

2 tbsp wholegrain mustard

1 tsp cumin powder

2 tsp curry powder

1/4 cup grated beetroot

1/4 cup grated carrot

1/4 cup grated zucchini

1 pinch salt


Place all of the ingredients into a bowl. With clean hands mix together until well combined. 

Shape the mixture into 4-5 medium sized burger patties. Put on a plate and chill in the fridge for at least 15 minutes

Place the burger patties on a lined baking tray. Bake in the oven for 15-20 minutes at 180c, or until cooked through


Serve in your favourite type of burger bun with some baby spinach, avocado, tomato and red onion. Or for a lighter option, serve in an iceberg lettuce leaf as a burger wrap. If your feeling super hungry whip up some oven baked kumara chips as a side
