GREEN ZUCCHINI NOODLE & SALMON BOWL
1/2 zucchini, peeled into noodles (using noodle peeler)
1/2 cup chopped baby spinach
1/4 cup chopped coriander
2 tbsp sunflower seeds
1/4 diced avocado
Juice of 1/2 lemon
1/4 cup finely chopped raw broccoli
1/2 fillet cooked salmon
1 tbsp olive oil
Place the zucchini, baby spinach, coriander and broccoli in a bowl with the olive oil. Combine well
Place the avocado in the lemon juice for 1-2 min. Add to the above bowl.
Break up the salmon into small pieces and toss through the salad.
Serve in a bowl and top with sunflower seeds.
This is a great option for lunch on the go - will keep well in an airtight container in a cool place. If you aren't into salmon, add your choice of protein like leftover sliced meat, tuna or falafel.
