ROAST KUMARA & PEA FRITTATA

INGREDIENTS 

8 free range eggs

1 cup frozen peas, defrosted

2-3 medium kumara (any colour, I like to have a mix)

1/2 block feta

Chilli flakes, salt & pepper to taste

METHOD

Dice the kumara into small cubes (2-3cm squares, drizzle with olive oil, season and roast in the oven at 180c until soft and golden. 

In a bowl whisk 8 eggs with 3 tbsp water. Season with salt and pepper.

Line a baking dish and spread with 3/4 of the roast kumara. Pour over egg mixture. Add peas & remaining kumara ensuring a good spread of the vegetables. 

Crumble the feta over the top & season with chilli flakes. Place carefully in the oven and cook for 35-40 minutes or until golden and cook through. 

SERVING SUGGESTIONS

Once cooked and cooled, cut into slices and store in the fridge for a quick breakfast, lunch or dinner option.
