SPICED BANANA BUCKWHEAT GRANOLA

INGREDIENTS

2 cups rolled oats

1 cup buckwheat groats (you can soak before using if your prefer)

1/2 cup sunflower seeds

1/2 cup linseed / flaxseed

1/3 cup coconut oil

2 tbsp honey

2 ripe bananas, mashed or blended into a smooth puree

1 tbsp mixed spice

2 tbsp cinnamon

1 tsp ginger

1/2 tsp salt

METHOD

Place all of the dry ingredients (including the spices) into a bowl. Ensure they are mixed thoroughly.

Over a medium heat, melt the coconut oil & honey in a pot until combined. Remove from the heat and add the banana puree

Pour the wet mixture over the dry ingredients and mix well. Make sure that all of the dry ingredients are covered in the wet mixture

Line a tray with baking paper and spread the mixture evenly. Toast in the oven at 180c on bake for 20 -25 minutes or until golden brown. After the first 10-15 minutes give the mixture a gentle stir but make sure you don't break up too many of the granola lumps. 

Once cooked, let it cool before storing in an airtight container. 

SERVING SUGGESTIONS

For breakfast, I serve with some natural yoghurt & fresh blueberries, or you can even pop a handful in a container and have on the go as a snack
