VEGGIE & EGG SCRAMBLE

INGREDIENTS

2 eggs

1 handful spinach

1/2 red onion, sliced

1/4 cup frozen peas, defrosted

1/4 red capsicum, chopped

1/4 cup crumbled feta

3 tbsp water

1 tbsp butter or oil

METHOD

In a frying pan, add the butter/oil, red onion and capsicum and cook for 2-3 min on high heat. Add peas and cook for 1 min further

In a bowl, whisk the eggs and water. Turn the pan to medium heat and add the eggs to the cooked veggies. Keep stirring until the eggs are cooked. Take off the heat and mix in the spinach and feta

SERVING  SUGGESTIONS

This is totally sufficient by itself with some salt and pepper, or add a piece of your favourite toast. I usually add a piece of my seed loaf that I make with some marmite, and top with some fresh slices of avocado
